Clean starts before the cooking does
Hygiene isn't something you do at the end of the day. It starts with clean hands, clean surfaces, and then clean hands again. In a kitchen that takes this seriously, washing and sanitising isn't a chore on a checklist — it's just the rhythm of how everything runs.
The cold chain is non-negotiable
Most food problems don't come from bad ingredients — they come from good ingredients kept at the wrong temperature. Keeping cold food cold and hot food hot, from delivery all the way to the plate, quietly prevents more trouble than almost anything else.
